The Smartypants mom uses some of their donated fresh mozzarella in this week’s episode of Making Food Monday: Pressure Cooker Creamy Mozzarella Chicken
Ingredients:
2-3 tbsp Olive oil
Chicken (as much as you need that will fit)
Salt and Pepper to taste
1 onion
2 tsp garlic
1 tsp oregano
1 tsp basil
2 tbsp Italian seasoning
1 tsp Chicken bouillon powder
2 cans diced tomatoes
8 oz cream cheese
1 lb (2 8oz packages) fresh mozzarella
—or—
2 cups shredded mozzarella
Serve over your favorite pasta or serve chicken topped with sauce and cheese.
