This is our first video on YouTube… the first of many, we decided to celebrate with our grandma recipe, the stew includes also pork sausages but you can leave them out, the result will still be great!
Recipe:
400g Beef Shoulder( you can use brisket, shank, ribs or any you like)
200g Plain Italian Sausage(in the Italian northern regions sausages usually are made only with salt and pepper)
2 Small Onions or one large
2 Stalks of Celery
2 Carrots
2 Large ripe Tomatoes otherwise good half a can of good quality preserved tomatoes
1 TBS of Demi-Glace, or beef bullion(optional)
2-3 cloves of garlic to taste lightly smashed unpeeled
1 Cup of dry white wine
1 heap TBS of flour
2 TBS of butter
1 TBS of non-extra-virgin olive oil( you can use any oil you want) not extra virgin olive oil because of the low smoking point
1 TBS of tomato concentrate
Rosemary, Sage, and Bayleaf to taste
