Usually it’s not eaten with “pasta all’uovo” (egg pasta) because eggs are already present in the sauce.
But just do whatever you want, I prefer pasta all’uovo over “normal” pasta in most pasta recipes, maybe because I’m from the north.

Too much cheese and probably not the right one. There is no point to make the pasta yourself in this case. It should be mezze maniche, at least where I am from .

Man these comments…there is no “correct” carbonara recipe, every family with an uncle who made charcoal has their own, just like there’s no “right” way to make cacciatore because every family has a hunter in it. People in the comments are acting like there was one guy who made all the charcoal in Italy and they’re the only ones who has his recipe.
