My only criticism, would be that nothing looked crispy. You need more maillard reaction. I think what could go a good modification would be…. Fry the sausage pieces, set aside, and fry the vegetables in that fat + butter/oil/ghee. Set aside, &fry the chicken. Then do everything you did afterwards.
