Baked Garlic Confit Sardines Wine Sauce 🍷 🐟✨
Ingredients:
• 1–2 tins sardines in olive oil
• ~1 cup garlic cloves
• ½ cup extra virgin olive oil (for confit, enough to mostly cover garlic)
• 1 cup cherry tomatoes
• ½ red onion, sliced
• 2–3 tbsp capers
• ½ cup white or rosé wine
• 1 tsp Italian seasoning
• Salt + pepper to taste
• Toasted sourdough or favorite bread
Garlic Confit:
Add ~1 cup garlic cloves to a small deep baking dish. Cover with ~½ cup EVOO (garlic should be mostly submerged). Season with salt + pepper.
Bake at 350°F for 45 min until soft and golden.
Assemble:
In a baking dish add:
• Cherry tomatoes
• ½ sliced red onion
• 2–3 tbsp capers
• add the garlic confit + the garlic evoo
• ½ cup white or rosé wine
• Italian seasoning, salt + pepper
Nestle sardines on top.
Bake at 450°F for 25 min until bubbling and caramelized.
Serve with toasted sourdough and spoon everything over the bread. The garlic oil at the bottom is liquid gold. ✨
