
A simple and quick recipe. Salsiccia is optional.
INGREDIENTS:
– 300g spaghetti
– 300g of fresh mushrooms (whatever you have)
– 6 medium sized tomatoes, chopped
– 3 salsiccias, casings removed, cut into pieces (optional)
– 3 garlic cloves (sliced lengthwise)
– 1 TBS of tomato paste (optional)
– 2 TBS of chopped parsley
– salt and cracked black pepper
– grated pecorino
PREPARATION:
1st large skillet -> add 3 TBS of olive oil -> add sliced garlic -> add the salsiccia (optional) -> fry a couple of minutes on moderate heat -> add the chopped parsley -> add the tomatoes and tomato paste (optional) -> fry for 5 minutes or so -> add the sliced mushrooms -> cook for 30 minutes -> add pasta* -> toss -> add grated pecorino -> toss -> check for salt and black pepper -> add a drizzle of pasta cooking water if needed and a drizzle of olive oil -> toss -> plate up and enjoy
2st cooking pot -> cook the spaghetti al dente in boiling salted water and when done add to the sauce*
